Fluffy okonomiyaki
Ingredients (serves 3-4)
100g pork belly
1/4 head of cabbage (chopped)
Seafood mix (as needed) 15g pickled ginger (chopped)
20g fried tempura bits
150ml water
A little salt and pepper 2 eggs 120g grated yam
140g plain flour
2 teaspoons of additive-free Japanese soup stock
How to make it
1. Combine water and additive-free Japanese soup stock , then mix in beaten eggs and grated yam.
② Mix the sifted flour into ①.
③Add all the ingredients except for the pork belly and cook in a heated frying pan over medium heat.
4. Once it starts to cook, place the pork belly on top of the dough in an even layer.
5. Once browned, flip it over, cover and cook slowly over low heat.

It is common to add yam to okonomiyaki to make it fluffy,
