Chinese chive and egg soup
A simple and delicious chive and egg soup.
Ingredients (2-3 servings)
1/2 bunch of Chinese chives 1 egg 1 pack of Chinese soup stock 400ml water
1 tablespoon light soy sauce (or dark soy sauce if you don't have it)
2 teaspoons potato starch
Sesame oil (as needed)
How to make it
1. Cut the chives into 3-4cm pieces, beat the eggs, and prepare the potato starch with 1 tablespoon of water.
② Add the Chinese soup stock pack to 400ml of water and bring to a boil. Then simmer on low heat for 5 minutes and squeeze the soup stock pack out.
③ Add soy sauce to ② and adjust the flavor, then add the water-dissolved potato starch to thicken it.
④When the mixture thickens, pour in the beaten eggs. (The key is not to stir.)
⑤Once the eggs are fluffy, add the chives and bring to a boil.
⑥Turn off the heat and add a small amount of sesame oil to taste. If it is too bland, adjust the flavor with salt and pepper.
