Eggplant and broccoli stir fry
It makes you want to eat more!
Ingredients (1-2 servings)
1 eggplant 1/3 broccoli stalk 1 tablespoon sesame oil
100g minced chicken
2 teaspoons potato starch
★1 tablespoon soy sauce
★1 teaspoon Chinese soup stock
★1 tablespoon sake
★Garlic tube 3cm
★1 tablespoon sugar
How to make it
① Mix all the seasonings marked with ★ together.
② Coat the minced chicken with potato starch.
③Cut the eggplant into large chunks and soak in water to remove the bitterness. After 5 minutes, drain in a colander.
④ Separate the broccoli into small florets. Boil water in a pot and add a small amount of salt. After boiling, boil the broccoli for 30 seconds until hard-boiled, then drain the water.
5. Add oil to a frying pan and steam-fry the eggplant.
⑥Once the eggplant has browned, move it to the side of the frying pan, add the minced chicken and stir fry.
⑦Once the minced chicken is cooked, add the broccoli and the seasonings listed in ①. Stir-fry quickly over high heat to evaporate the water, then serve on a plate and it's done.
