Okra and Chinese yam with plum and Japanese dashi

This dish is an exquisite match of plums and Japanese soup stock.

Ingredients (serves 2-3)

7-8 okra stalks 100g yam
2 large pickled plums 1.5 tablespoons of mentsuyu (straight)
★1/4 to 1/2 teaspoon of the ultimate Japanese soup stock

How to make it

1) Peel the okra and rub it with salt (not included in the recipe).

Remove the seeds from the umeboshi plums and chop them finely with a knife so that they can be easily mixed with the other ingredients.

3. Boil water in a pot and boil the okra for about 1 minute, then rinse with water and cut into 2-3 equal pieces.

Peel the yam and cut it into bite-sized pieces. I cut it into 1-2cm pieces this time.

5. Add the okra, yam, pickled plum, and seasonings (★) to a bowl, mix well, and it's done.

* Adjust the amount of noodle soup and Japanese stock to your liking.
